this prevents losing the entire dough if an egg is spoiled.</p></li><li><p>Using a fork, whisk the eggs inside the well. Slowly pull the flour from the edges toward the center, mixing clockwise.</p></li><li><p>Once the dough starts coming together, use your hands to knead it until it forms a rough ball. Transfer to a clean surface and knead for about 15 minutes, until smooth and elastic.</p></li><li><p>Wrap the dough in plastic film and rest it at room temperature for 30 minutes.</p></li><li><p>Dust a baking tray with flour. Set aside.</p></li><li><p>Flour your work surface. Divide the dough into 4 pieces with a knife or spatula.
